SAANICH FOODIE: All-grain whisky a first for Saanich distiller

He’s Saanich’s Willy Wonka of booze, and he’s at it again.

Master distiller Ken Winchester of deVine, also the creator of Victoria Gin and Glen Saanich Whisky, has introduced a new breed of whisky to the traditional line of bourbons and scotches. Ancient Grains is made from 100 per cent organic B.C. grains, mashed, fermented and distilled by deVine.

It uses barley, emmer, einkorn, kamut and spelt – the ancestors of all modern grains – and is aged in new American oak casks to add spice and a deep mahogany colour, Winchester said.

The product launches Saturday, noon to 5 p.m., at deVine’s Winery and Distillery tasting room, 618B Old West Saanich Rd. The whisky is also in local lounges and restaurants.
